Ever since we started eating healthier a little more than six weeks ago, I feel like I’ve spent a ton of time combing through recipes. While I know this is outside of the normal scope of my content, responses to an Instagram poll were unanimous: everyone wants help when it comes to eating healthy!
I should start by saying that I’m no health expert. These are the recipes that have worked for us in the plan that we’re doing, and with our food preferences. I don’t eat pork or shellfish, which limits us a bit, but fortunately there are many ways to make chicken (and other options too!). Most of these recipes are on the easier side as far as execution and not too time-consuming, so they work for busy weekdays. As tempting as it is to not cook some nights, it’s so much easier to eat healthy when you’re making your own food, so quick and easy recipes are a must.
I do much of my recipe research on Pinterest, and I have a Healthy Eating board where I tend to save things. My mom also got us the Skinnytaste: One and Done cookbook, which is full of one pan/pot meals. In terms of kitchen tools, it definitely helps to have a slow cooker and an Instant Pot, if you want to keep your options open. But, there are plenty of recipes that only require a sheet pan or a skillet. I usually make 4 or 6 servings of recipes so that we have leftovers to eat as lunches.
